Healthy Breakfast Meal Prep Ideas

You know that breakfast is the most important meal of the day. A healthy breakfast can improve your entire day. It should have protein, produce, and just enough carbs to get you going in the morning. The only problem? You don't have the time or energy to cook between waking up and heading out the door.

No problem. You might be amazed just how many healthy breakfasts you can prep ahead of time. You can make breakfasts that reheat beautifully, and you can grab and eat breakfasts as you rush out the door and still get that healthy breakfast boost. We've put together five delicious healthy breakfast meal prep ideas to get your day started the right way, even when you're in a rush.

Breakfast Burritos and Sandwiches

There's no denying that a healthy breakfast burrito or sandwich is a great way to start your day. Skip the fast food breakfast loop and make your own hot and hearty breakfast meals. You can throw together a ton of breakfast burritos and sandwiches over the weekend or at night - whenever you have time - then reheat a couple each morning for a delicious yet healthy breakfast that will fuel your whole morning.

Start with your tortilla or sandwich bread. We suggest English muffins for breakfast sandwiches because they hold up the best when pre-made and reheated. Lay out your carb wrappers, then layer in cooked eggs, bacon, spinach, diced tomatoes, and a layer of cheese. You can also add a few extras like chopped mushrooms, sauteed onions, and sausage slices/crumbles, depending on your personal tastes.

  • Eggs: Scramble for burritos, cook flat for sandwiches
  • Bacon: A little goes a long way
  • Spinach: Shredded
  • Tomatoes: Diced
  • Cheese: One layer

Make each individual breakfast wrap or sandwich and stack them in a tupperware container separated by wax or parchment paper. You can also seal and freeze them individually. Reheat in the oven wrapped in foil, or in the microwave based on your preferences for a hot and quick healthy breakfast.

Fruit Parfaits

If you love a good fruit and yogurt parfait, you don't have to carefully layer them for breakfast each morning. You can make a large batch of parfaits at the beginning of the week and enjoy one every single morning for breakfast just by pulling them out of the fridge. This technique is often done with mason jars (convenient sealing lid), but you can use any cup or jar with a top.

  • Sweet yogurt
  • Chopped fruit and berries
  • Granola and whole grains

Layer each jar with yogurt on the bottom, then granola, then fruit on top. It's as simple as that. Then grab a spoon and a parfait every morning to start your day with energy and nutrition that tastes like breakfast dessert.

Oatmeal Breakfast Cookies

If you need a healthy breakfast you can eat as you run out the door, make oatmeal breakfast cookies. We absolutely love these high-protein and fiber breakfast cookies that will power your entire day in just a few bites. They are healthy, sweet, and don't even need to be chilled or reheated. You can keep a cookie jar of them on the counter and eat them any time you need a boost, make them part of your breakfast, throw them into your packed lunch, and so much more. The recipe is also very simple.

  • Mash bananas
  • Blend in nut butter (sun butter, peanutbutter, almond butter - your choice)
  • Mix in oatmeal until firm
  • Stir in toppings (your choice)
    • chopped fruit
    • raisins
    • chocolate or peanutbutter chips
    • nuts and seeds
  • Bake for 18-20 minutes at 350 F
  • Cool for 10 minutes

From there, you can snack immediately and store the rest in an airtight container for healthy on-the-go breakfasts and snacks all week.

Healthy Egg Bites

If you love scrambled eggs, omelets, egg casseroles, or quiche, you will love quick make-ahead egg bites. They are basically portable muffin-shaped omelets with everything you need for a healthy egg breakfast in the palm of your hand.

  • Blend together:
    • eggs
    • Salt, pepper, and your favorite breakfast spices
    • Chopped veggies to taste
      • (spinach, mushrooms, tomato, etc)
      • You can pre-sautee the veggies if you choose
    • Your favorite cheese for egg breakfast
      • (cheddar, feta, mozerella, etc)
  • Pour into oiled muffin tin
  • Bake for 17-20 minutes at 375 F

When the eggs have cooled, you can scoop them out of the muffin tin with a silicone spatula and store them in a tupperware in the fridge. These egg bites are tasty eaten cold, but are even better if reheated quickly in the oven or microwave for a fast and healthy egg breakfast every day.

Make-Ahead Smoothie Packs

Last but not least are make-ahead smoothie packs. A freshly blended breakfast smoothie is a great way to start your day, but you may not want to make a routine of measuring and chopping for your smoothie every morning. No problem! You can spend some time early in the week doing all the measuring and chopping necessary. Then simply seal up individual smoothie packs and dump them into the blender before your brain has even started working in the morning. You'll be sipping a delicious smoothie by the time you're ready to put on your shoes.

  • Pre-chop fruits and veggies into one-smoothie portions
  • Add grains, seeds, and powders
  • Seal into individual containers
  • Freeze or refrigerate, your choice for texture

It's as easy as that. All you need to do is measure your liquids on the day-of and then dump in your smoothie pack. Pop on the lid, blend, and serve. This is a fast, easy, and mess-free way to enjoy a deliciously healthy smoothie every morning with almost zero effort.
